Take A Walk on the Green Side of Beets

BEETS!!!!In one of our previous blogs, we talked about eating seasonal produce from each color palate of the rainbow, and the nutritional benefits obtained from eating fruits and vegetables from each group.

Today we will spotlight beets! If you visit Providence Produce at the Waxhaw location, chances are good that you have seen our front display cooler packed with fresh beets. Beets provide minerals and nutrients from both the Red and Green palates of the rainbow! Most everyone has heard of roasted or pickled beets, but did you know that the greens are edible too? Beet greens are closely related to swiss chard in texture, but resemble spinach in taste. So when you pick up some beets at Providence Produce, you are gaining two meals from one purchase, plus all the nutritional value from two of the food color groups!

Below is a favorite Italian greens dish from my childhood. Buon Appetito!

Ingredients
1 pound of beet greens (about 3-4cups) (Can also use swiss chard or spinach)
3 Tbls olive oil
½ c. prosciutto, diced (Can also use ham, bacon or Italian sausage)
½ c. onion, chopped
3 cloves garlic, minced
5 hot pickled cherry peppers, chopped (Can also use sweet or any kind of pepper)
½ c. water (Can also use vegetable or chicken broth)
salt and pepper to taste
? c. bread crumbs (optional)
¼ c. Romano cheese, grated (optional).

Greens recipeInstructions

Thoroughly wash and rinse beet greens and chop into small pieces. (Do not use the stems)

Bring salted water to a boil and blanch the beet greens for 2 minutes. Drain, and run under cold water.

Heat olive oil in a frying pan. Add the prosciutto and onion and cook for about 5 minutes.

Add the garlic and cook for another minute.

Add beet greens, cherry peppers and water. Stir together and add salt and pepper to taste.

Cover and cook until greens are wilted, around 7-8 minutes.

Sprinkle with bread crumbs and cheese, and put under the broiler for 2 minutes to brown the top.
